1/4 pound (1 stick) unsalted butter
1 lemon, zested and juiced
1 teaspoon chopped fresh thyme leaves
1 fresh turkey (10 to 12 pounds)
Freshly ground black pepper
1 large bunch fresh thyme
1 whole lemon, halved
1 Spanish onion, quartered
1 head garlic, halved crosswise
- Preheat the oven to 350 degrees F.
- In a small saucepan, melt the butter. To the butter mixture, add the lemon zest and juice, as well as 1 teaspoon of thyme leaves. Place aside.
- Remove the giblets from the Perfect Roast Turkey Recipe and thoroughly wash it inside and out. Remove any excess fat and pinfeathers before patting the outside dry. In a large roasting pan, place the turkey. Season the inside of the turkey cavity liberally with salt and pepper. Stuff the cavity with the thyme, lemon halves, onion quarters, and garlic. Brush the roast chicken with the butter mixture and season with salt and pepper. Tie the turkey’s legs together along with string and tuck the wing tips under the body.
- 2 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Transfer the turkey to a cutting board and tent with aluminium foil for 20 minutes.
- Serve the turkey sliced.
